I've always made it a priority to eat healthy, live healthy and stay healthy. With such a variety of snacks and sweets that taste so delicious, I had to find a way to enjoy them as well and in the healthiest way possible. Most of my recipes come from Instagram and other sites online. I do have a few recipe books I would recommend - these are listed at the bottom of this article.
Here is a list of some of my favorite snacks:
Chocolate Walnut Banana Bread - For those of you who enjoy bananas, this is for you! This banana bread is gluten free, refined sugar free and vegan! This is a recipe I found on Instagram @bonny.appetit - she has some amazing recipes going on. 2/3 cassava flour 1/4 cocoa powder/ cacao 3 large spotty bananas 1/2 cup walnut butter 2 tbsp melted coconut oil 1/2 tsp baking soda 2 flax eggs (1 egg= 1 tbsp flaxseed with 3 tbsp water) Cinnamon In a large bowl, mash the bananas together and then add eggs, oil and walnut butter and mix until smooth, then add flour and baking soda. If batter is too thick, add some plant based milk. (oat, soy, almond etc.) Bake in preheated oven at 350 F for 40 minutes. Let cool before slicing and enjoy!
Coffee Cake With Frosting - This fluffy, gluten free coffee cake is one of my favorites! With creamy coconut frosting this gluten free, dairy free cake is everything! Here are the ingredients you'll need. 2 1/2 cups almond flour 1/4 cup coconut flour 1/2 cup coconut sugar 5 tsp instant coffee 2 tsp baking powder 1 tsp vanilla extract 1/4 cup melted coconut oil 1/2 cup plant milk 3 eggs Pinch of salt Combine the flour, coffee, sugar, salt and baking powder and stir in with the wet ingredients. Mix until smooth. Bake in preheated oven at 350 F for 30 minutes. For your topping you can use a creamy coconut yogurt and sprinkle with some cinnamon!
Cinnamon Rolls - This easy vegan cinnamon rolls recipe is one of my favorites. When trying out this recipe I learned that I didn't even have to make the pastry at home since store bought pastries are usually vegan! Here are the ingredients you'll need for the filling: 3 tbsp softened vegan butter or coconut oil 1/3 cup coconut sugar Cinnamon (about 1 tsp) Spread out the butter on the pastry surface and evenly sprinkle with sugar and cinnamon. Roll up the sheet and slice into rounds. To give a golden appearance, brush more of the vegan spread on top and bake for 25 minutes. If you want to add an icing you can mix dairy free yogurt and maple syrup. Take a bite and enjoy!
