My Favorite Couscous Salad Recipe

As far as I'm concerned, couscous is made of carbs and I know it might not be all too healthy to have it every day but I do love treating myself to a nice sized bowl every once in a while. I'd like to bring an important point here (since I'm all about sending positive messages). You must have a balance in anything you do in life. Even if it means allowing yourself to have a cheat meal without feeling guilty about it. Even tho I'm all into my healthy foods, there will always be those days that I can allow myself to enjoy an ice cream, a cupcake, sushi or my favorite salad:) And the best part is... it's all GUILT FREE!


So, here's what you'll need to make the best salad in the world:


- A bowl

- Couscous

- Chickpeas

- Your colorful veggies

- A positive attitude!


Instructions:


- Boil 1 cup of couscous with water (just enough to cover up the couscous) ~ about 3 minutes

- Pour the couscous into your glass bowl and use a fork to separate the grains

1 diced tomato

1 diced cucumber

1/2 diced red bell pepper

1 can of chickpeas

1 red onion, diced

Kalamata olives

Parsley

Mint Leaves

Basil

Oregano


Sauce/ Juice:


Lemon zest

Lemon juice

Red wine vinegar

Salt

Black Pepper

Olive Oil


Mix everything evenly and Viola! You have the perfect Middle Eastern Couscous salad EVER!!!


* You can always get creative and use your own favorite veggies and add or take off from the amount given in this article.
